Welcome to my chewy, rich and super fudgy peanut butter and white chocolate crumb blondies. Bursting with PB flavour these beauties are full of character and so buttery!
FUDGE. If you don’t like this texture, then I’m sorry your not gonna like these blondies. To be honest I thought anything that was fudgy, had chocolate in it and gets cut up in squares was a brownie. But no this is so not the case! Blondies are like brownies but don’t have that rich chocolate colour as they don’t have cocoa powder in them so they are lighter in colour. Well that’s how I’d explain blondies. A term I only just found of about recently.

Let’s talk about this beautiful crumb. It was a complete accident. A great accident. I wanted to drizzle these blondies with a peanut butter and melted white chocolate. BUT it wouldn’t come out as the drippy texture I wanted. I left it on the kitchen counter while I let the blondies cool down. The white chocolate mixture cooled down too and it went all hard. I though WTH what a waste of ingredients!! But then I broke it up apart and thought YUP I’m gonna crumble this on top instead. They taste just as great and look even more beautiful then I first anticipated.

I swear taking a picture was so hard my kids were creeping their hands in to every shot. Ever tried making toddlers wait a long time for fudgy goodness. Not a good idea! They tried hard, but thank God they didn’t ruin the picture. One time I left some cookies on a table and I swear I turned around for 2 seconds and when I looked back at least 4 were gone, and a bunch damaged. The trail of crumbs lead me to the living room sofa…also covered in chocolate. Caught chocolate handed!
I used crunchy peanut butter in this recipe, you just need to try it! The texture is soooo good! These blondies are so damn morish and are an amazing combination of :
- Buttery
- Moist
- Dense
- Fudgy

Peanut Butter and White Chocolate Crumb Blondie
Fudgy deliciousness in a blondie
Ingredients
Wet ingredients
- 1 egg
- 1/2 cup pure crunchy peanut butter
- 1/4 cup honey/pure maple syrup
- 1 heaped tablespoon Greek yogurt (The yogurt makes it very fudgy. But still works without the yogurt, if want to leave it out then reduce the oat flour to about 1/3 cup)
- 1 teaspoon vanilla
Dry ingredients
- 1/2 cup Oat flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 100 grams white chocolate
Instructions

Preheat oven at 170*C

In a bowl whisk egg and then add in all the wet ingredients. Stir together until fully combined.

Stir in all the dry ingredients together.

Pour wet mixture into dry mixture and gently stir.

Lastly add in chopped white chocolate and gently fold.

Pour mixture into a parchment paper lined baking tray. Bake for 17mins.

While the blondies are in the oven, make the crumple top.

For the white crumble top: In a saucepan simmer hot water and place a heat proof bowl on top. In the bowl melt 60 grams of white chocolate with a table spoon of smooth peanut butter. Stir until melted together. Leave mixture to cool down and then when its hard enough crumple on top of brownies freshly out of oven.

Cut in to squares when cooled down completely.
