Something I love even more then cookies are quick cookies. I mean I really hate finicky recipes. Quick and easy is what I strive for in the kitchen. Besides making the almond butter (because I run out!). This recipe seriously took 5 mins to make and 7 mins baking time. 12 mins in total? YES PLEASE!!!
This recipe was a total accident. I was planning on adding an egg into these cookies but realised I didn’t have any. I was already in the baking mood so I went along and make the cookies without the planned egg involved.
Omg. They came out so good! Buttery with a mix between soft, chewy and crunchy. I was super pleased with the results needless to say.
It is Ramadan so I was fasting while making these, not a good idea. Especially when my trusted taste testers (my kids) gobble them up right in front of my face. Using every adjective they can to explain how ‘yummy’ these are.
Get away from me I cant handle cookie temptation I’m weak!
If like me you ran out of almond butter and are interested to know how to make some your self. Below is the simple steps of how I made the almond butter:
*Roast for 10 mins in oven on 180*C, blend, scrap sides, blend again, turns into dough (last picture) then finally turns into smooth butter. It takes some time and especially if you have a old processor like I do. Have patience it will form a butter!*
These cookies are perfect for when you have run out of snacks and are about to run to the shops. Let me stop you oil your tracks and demand you make these beauties.
Almonds are amazing nuts not only are they delicious, almonds are also healthy fats. Those healthy fats help fight heart diseases as well as lower your cholesterol. No to mention almonds are also packed with calcium, magnesium, vitamin e AND copper. Tasty and good for you? Yes please.

Almond Butter Chocolate Chip Cookies
Simple almond butter and chocolate chip cookies. A scrumptious mix of chewy and crunchy enough to make you fall in love!!
Ingredients
- 1/2 cup oat flour (blended regular oats)
- 1/2 cup almond butter
- 3 or 4 tablespoons light brown unrefined muscovado sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 2 or 3 teaspoons milk (any type)
- 1 teaspoon vanilla extract
- 60 grams dark chocolate chunks or chips
Instructions

Preheat your oven to 18O*C.

Using pure almond butter (should be runny) mix all your ingredients together, except chocolate and form in to a dough.

Add in the chocolate chips/chunks and mix.

Roll and shape into cookie shapes, slightly press down. Bake for 7/8 mins for 180*C. ENJOY!

For a tip to get bakery style looking cookies with melted chocolate puddles!! Add a few chocolate chunk pieces in after 4 mins of the cookies baking. Gently push in the chunks and bake for the remaining time.

Cool down for 10 mins before eating. Helps keeps the shape!
