These irresistible mini doughnuts dipped in a mouth watering mascarpone and muscovado chai glaze are so good, you’ll eat a dozen without noticing!
I absolutely love doughnuts (I like spelling it as donuts). It just makes…sense. Ever since cutting down on sugary oily over processed stuff, donuts are what I miss the most. When I walk past a bakery and see those beautiful framed little circles crying out my name, it is REALLY hard to resist. So I actually tried making my own and these were my first attempt. Enter my mascarpone muscovado glazed chai pistachio Donuts. I was searching online for a donut tray and then came across a donut MAKER for £11 what the heck I thought. I need this in my life. Obviously I purchased it so quick I didn’t know how small the rings actually were. Yup very mini. So I used a mini donut maker. It was cutest appliance I have ever used. I just made the batter and poured it into the doughnut maker.
It’s really simple and then there was the fun part, dipping and sprinkling! Guys this glaze is SO good, you will lick the heck outta the bowl. I almost cried when I realised I was fasting (as its Ramadan) and couldn’t lick the bowl. Emotional.
Almost every single recipe called for powdered white sugar and as I don’t use white sugar anymore. I just blended some unrefined light muscovado sugar until it became powder. So easy. I then added some chai spices, the usual culprits: cinnamon, ginger, ground cloves and ground cardamon. Mixed the sugar and spices together and it was done!
The colour contrast in these mini doughnuts make them so beautiful to look at I almost didn’t want to eat them. But I did. I ate them alright. When I finished making them, I didn’t think my 3 year old Ismeal would have eaten these with the nuts being very visible and the fact they were green looking. But he did and that gave me confirmation that these were as tasty as they look!

Mascarpone Muscovado Glazed Chai Pistachio Donuts
Ingredients
Dry ingredients
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1/8 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Wet ingredients
- 1/4 cup light muscavado sugar
- 2 tablespoons olive oil
- 1/4 cup milk
- 1/4 cup yogurt
- 1 teaspoon vanilla extract
Glaze
- 2 tablespoons mascarpone cheese
- 2 teaspoons milk
- 1/4 cup powdered brown sugar
- 1 teaspoon vanilla extract
Chai sugar mix
- 1/2 cup powdered brown sugar
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger powder
- 1/2 teaspoon ground cardamon
- 1/4 teaspoon ground cloves
Instructions

In a bowl add the dry ingredients together.

In another bowl add the wet ingredients together.

Pour the wet in to the dry and combine gently.

Pour into doughnut maker until golden, about 3/4 mins

when cooled down for a couple of minutes, dip into glaze and then dip in to the chai sugar immediately. Sprinkle with pistachio nuts. ENJOY
To make glaze

Add 2 table spoons of mascarpone cheese OR Philadelphia cream cheese, 2 teaspoons of milk (to thin slightly) 1 tea spoon vanilla extract, 1/4 cup powdered brown sugar. Mix until glaze is formed.
To make chai powdered sugar

Add 1/2 cup powdered brown sugar (blended light brown unrefined sugar in a high speed blender) then add 1 teaspoon of cinnamon, 1/2 teaspoon ginger, 1/2 teaspoon ground cardamon 1/4 teaspoon ground cloves. Mix until combined.
