A deliciously summery classic Turkish salad that has been remixed with seasonal, juicy and roasted strawberries sure to tantalise your taste buds.
It is summer and berries are juicy, ripe and available in abundance here in the UK. You cannot beat seasonal fruit, especially homegrown. The internet is buzzing with summer recipes right now. Amazing posts all over Instagram showing us new ways to cook and bake with fruits. With all the strawberries and plums I have been buying recently I just had to start doing something different with them.
So I started off with strawberries!
Enter my remix to a classic Turkish salad (that doesn’t need a remix at all let me just point that out!). A typical Turkish salad consists of:
- Parsley
- Onion
- Cucumber
- Tomato
- Lemon juice
- Olive oil
- Pomegranate molasses
- Sumac (a citrusy flavoured middle eastern red spice).
Strawberries are best fresh and last a couple of days in their best form. I had a few in the fridge that were worse for wear but still deliciously edible. So I decided to add them to the Turkish salad I was preparing that day. I wasn’t to excited about turning on the oven in this heat but it was definitely worth it.
The strawberries became so delicate and even more juicy from their time spent in the oven. The roasting left a wonderfully fragrant puddle of jam in between each berry. This gave them a sweet/sour vibe and the pomegranate molasses really complimented the strawberries beautifully.
Enjoy the last month of summer, get as many strawberries as you can and make this beautiful salad.

Turkish salad with roasted strawberries
Ingredients
- 100 grams strawberries
- Half a bunch of parsley
- 1 large tomato
- 1/2 a cucumber
- 1 red onion
- 1 heaped tablespoon extra virgin olive oil
- 1 tablespoon sumac
- generous pinch of sea salt
- 1 tablespoon pomegranate molasses
Instructions

Chop up all the ingreidents finely.

Add everything (leave a small handlful of the roasted strawberries to garnish at the end) to one bowl and spinkle the sea salt, sumac and pour over the olive oil and molasses.

Mix everything up to make sure it is all incorporated and nothing is left untouched!

Taste to see if more seasoning is needed, then top with the extra strawberries and serve.
