Presenting a cinnamon spiced pecan banana bread ideal for your morning cup of coffee or tea! So this is the first time I made banana bread. Actually this is the first time I have made banana flavoured ANYTHING. I can’t lie I love bananas but not so much in bakes, especially if the banana flavour is extremely strong. So understandably I’ve always been too nervous to try making banana bread because hey lets be honest it just sounds very BANANA-RY. But guys I was very pleased with this outcome. I tried a banana loaf with my fav combo, cinnamon and pecans. I mean anything with pecans and cinnamon tastes amazing am I right, or am I right?
Don’t let the baking time turn you off it does take quite a while to bake but the prep is very simple so give it a go!
I did some deep cleaning today, I am exhausted. I didn’t actually know how many toys these boys had. They play with 1% of what they have. They are gonna be horrified to wake up tomorrow and see everything is gone. I gave it to our local learning centre and charity shops. My nightmare is that they put their toys out in front of the charity shop and they see when we walk by to go nursery in the morning. They would cause a SCENE on the spot. I mean I know they are kids but I’m nervous as heck and I am already planning what I would have to do if this was to happen. *Help*
Anywho for now I’m gonna just enjoy my cup of tea and a slice of this pecan banana goodness.

Pecan And Cinnamon Banana Bread
Delicious yet simple banana bread recipe
Ingredients
Wet ingredients
- 2 medium bananas
- 1 tablespoon Greek yogurt
- 1/4 cup honey
- 2 eggs
- 1/4 cup coconut oil/olive oil
- 1 teaspoon vanilla extract
Dry ingredients
- 1/2 cup oat flour
- 1 and 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon cinnamon plus extra for sprinkling on top of bread later
Instructions

Mash bananas in to a bowl.

Whisk eggs and add in oil, honey, vanilla, yogurt and stir. Once combined add into mashed bananas.

Mix together all the dry ingredients and then combine wet ingredients into dry and gently fold.

Pour mixture into loaf tin and place some pecans on top, either crushed or whole. Sprinkle a 1/4 teaspoon of cinnamon on top.

Bake for 50-55 mins.

Take out and let the loaf rest for about 15 mins before eating.
