Did somebody say breakfast tacos?
Yes breakfast taco’s are a thing ladies and gentleman.
I was craving some breakfast tacos and didn’t have any tortilla wraps. But I always have these oat pancakes on hand so I just thought hmm lets see how these turn out. Turned out just perfect!
These are so cute and quaint.
But don’t be fooled these small bundles of joy, they are packed with protein from the spiced black beans, eggs and bursting with fibre from the oat pancakes of course.
Okay so there are a few steps to this pancake breakfast taco, but each step is relatively simple and this can all be done within 20 mins. Recipe and steps are written down below, enjoy!

Pancake Breakfast Tacos
Ingredients
For the black beans
- 1 can black beans
- 1/2 onion
- 1/2 a green bell pepper
- A tablespoon of tomato puree/paste splash of passata or chopped tomatoes works too.
- 1 teaspoon cumin
- 1 teaspoon chilli powder
- 1/2 teaspoon salt
- Half juice of a lemon
- 4 small/medium oat pancakes *recipe pancake in the method down below*
Half a red onion slices to top tacos
- Sliced ripe avocado
Mint and garlic sauce
- 2 tablespoons Greek yogurt
- 1 teapoon dried ground mint
- 1 fresh garlic clove crushed (very finely)
- dash of freshly squeezed lemon
Instructions
Black beans:

Set the hob on medium high and chop both the onion and bell pepper finely and saute until tender.

Once the onions and peppers are cooked, add the tomato paste.

Open can of black beans and rinse well using a colander.

Add in the rinsed black beans to the onion and pepper mixture. Throw in a splash of water, put a lid on and leave to simmer for 10 mins.
Pancakes:

While the black beans are cooking, get on to making the oat pancakes. *Recipe here* .
Sunny side up eggs:

Once pancakes are done and black beans are also cooked,make the egg. Lightly drizzle olive oil on pan and cook egg sunny side up.
Mint and garlic yogurt sauce:

Add all the ingredients together until smooth. That's about it folks!
Time to assemble the tacos:

Lay the pancakes flatly and add generous scoop of black beans. and 1 egg. Top with sliced avocado, sliced red onions and a dollop of mint garlic yogurt. Shape in to tacos by wedging a lemon at the front and end of the tacos.DEVOUR AND ENJOY 🙂
