Vegan butter bean quesadillas with caramelised onions and sautéed kale. I replaced cheese with avocado garlic mayo to give you that super creamy quesadilla vibe!

I LOVE A GOOD QUESADILLA. They need to be creamy though! There are endless ways to fill quesadillas and I love trying new fillings. This Ramadan I tried my hand at butter bean quesadillas. I have been loving this bean and thought it would definitely hold well in a quesadilla.
I skipped the cheese in this quesadillas and used creamy avocado mayo. Making these accidentally vegan and so good.
These quesadillas are so rich and filled with veggies. This mixture is a perfect way to add extra veggies to your sandwich or wrap mixture.
I kept the recipe super simple as if you are just trying out with this bean you can increase your flavour next time. I have since tried these with sun-dried tomatoes and roasted peppers. WOW just wow. Soo good.
Homemade tortillas
I toasted this deliciously creamy mixture of mashed butter beans, caramelised onions, garlic avocado mayo and sautéed kale with my homemade tortillas.
These wonderful golden wraps are made with 2 ingredients and they are both technically vegetables. Cassava flour (cassava is a root vegetable) and butternut squash! Grab this EXTREMELY easy recipe over here.
Butter beans
Butter beans are a great source of protein and fibre. These beans are so versatile. You can add them whole into salads, soups and stews. But recently I have loved mashing them. Butter beans have the perfect texture for mashing.
They have beautiful soft interior which makes them become super creamy when mashed. You could also use other white beans like haricot beans or even chickpeas.
Chickpea quesadillas are SOO GOOD! We had those a lot during ramadan and I have a delicious recipe for this here. I used tomatoes, red peppers, cumin and paprika for extra flavour and you will not want to skip this recipe.

Vegan butter bean quesadilla
Ingredients
- 1 can or carton butter beans if you are using homemade butter beans then 2 cups of cooked beans.
- 2 cups kale
- 1/2 cup caramelised red onion
- 1/4 cup avocado mayo
- 2 teaspoons sea salt
Instructions

Sauté the kale until just softened. This should take around 1 minute.

Mash butter beans. And add in the caramilsed onions, sautéed kale, mayo and sea salt. Mix until fully combined.

Pre heat a pan on medium heat.

Flatten the tortilla and add some mixture on to one side of the tortilla. Close and press gently. Pan fry with some olive oil until browned. Flip and continue to do this until all the mixture and tortilla's are finished.

Serve with your favourite dip and enjoy!
Recipe Notes
If you are not vegan, you could definitely add cheese to these quesadillas. I have and it was SOO GOOD!
