Delicious sweetcorn and courgette fritters so tasty the whole family will be fighting over them. Served with a dollop of coriander and lime yogurt and guacamole. Perfect for breakfast or brunch.
I am a huge fan of making fritters, they are so quick to make, pretty to look at and definitely a crowd pleaser. I usually make a double batch so I can just freeze some for a rainy day. Always necessary when you have kids!
With only a few ingredients these fritters are a great way to get some veg inside you, without actually tasting the veg. If you know what I mean. Don’t be fooled by their small frame these beauties are filling and satisfying.
With the obvious benefits from the veg, this can be a mighty breakfast with the added guacamole giving us some healthy fats and the yogurt giving us some protein to start our day right.
The amount of things you can hide in a fritter is endless, but I thought I’d keep it simple this Sunday and opt for the good ol corn and courgette mix.
This takes 15 mins to make start to finish so get yo butt in the kitchen this morning and do your belly some good and make these nutritious and delicious fritters.
Sweetcorn and Courgette Fritters
Ingredients
- 1/2 cup whole wheat flour or any other flour you prefer.
- 1/4 cup milk
- 2 cup sweetcorn
- 1 medium sized courgette
- 2 eggs
- 3 tablespoons chives
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- A dash of pepper
- 1 tablespoon olive oil
- Zest of Half a lemon
Instructions

Grate the courgette and then rinse any excess water. Use a tea towel. Strain completely so mixture doesn't get too soggy.

Mix the flour and the rest of the dry ingredients together.

Mix the wet ingredients together with chives and lemon zest in a separate bowl and mix.

Mix the dry and wet ingredients together, to make a batter.

Heat pan to medium heat and add a drizzle of olive oil. Take a tablespoon full of the batter and cook for about 3 mins each side or until golden. Repeat this until the batter is finished.

Serve with what your heart desires!
To make the yogurt sauce

3 large tablespoons of Greek yogurt or sour cream, juice of half a lime, 1 red chilli de-seeded, a dash of salt and pepper, garlic powder and a bunch of coriander. Mix until smooth.

To make a quick guacamole

1 ripe avocado, juice of a lime, half a red onion, half a tomato, 1 teaspoon cumin and a dash of salt and pepper. Mix altogether until smooth.
Came across ur blog on insta and really fell I love with this. Went on ur blog and made these yesterday morning for my husband and me, he loved it. The yogurt sauce and guac was a perfect addition or it would have been too bland for me.
