I have been binging so much this week. The first time I have properly binged since starting to eat better. I guess sometimes you gotta give in to what your body needs. My mum was determined to get me to let loose and gain some weight this week while I stayed round hers. She will never come to terms with the fact that it’s so unbelievably hard for me to gain weight, I have tried everything. I know ‘poor me’ but seriously I went back to my old ways these last couple of days and just succumbed to the sweet life. Everything from an endless supply of chocolate, crisps, shop bought cake to sweet pastries.
So I am currently back at my place and I am detoxing the heck outta my body. Starting breakfast with these amazing nutritious waffles. Sweet potatoes are amazing root veg, they are a complex carbohydrate that are high in vitamin A, fibre and protein. Great way to start the morning.
You can add your favourite spices to jazz up this waffle, but I kept it simple used 2 eggs, 1 large sweet potato, 1 small onion, chilli powder, oregano, black pepper and salt.
Eat these waffles with a dollop of Greek yogurt and some chopped chives or even a sunny side up egg. Add some cheese in to the batter before waffling, for a melted cheese texture. OMG so good with cheese!
Sweet Potato Hashbrown Waffles
Ingredients
- 2 cups shredded sweet potato 1 large sweet potato or 2 small ones
- 2 eggs 1 egg is also fine, it will just lead to a crisper hash brown
- 1 small onion
- 1/4 teaspoon pepper
- 1/8 teaspoon salt
- 1/2 teaspoon chilli powder
- 1/2 teaspoon cumin at this point go crazy on your fav spices or keep it super simple.
Instructions

Peel and grate the sweet potato.

Squeeze the moisture out of the potato's by squeezing the grated potato with a tea towel. Make sure all the juice is drained out.

Mix all the ingredients together.

Pour half the batter into a waffle iron and let it cook for about 3 minutes. If it needs to be cooked a bit longer, leave it on the waffle iron for another minute or two.

Pour the remaining mixture in the waffle iron, and once cooked. Top with Greek yogurt and chopped chives and a squeeze of lemon.
I was so scared to make this recipe but tried it anyway. Last time I did anything with sweet potato it was yucky. But this turned out so good and didn’t take ages like I thought!
