Flavoursome roasted peppers and sun dried tomatoes with eggs sunny side up, starting your day off right!
This morning I woke up wanting eggs and waffles. But I didn’t want the usual eggs I wanted something a little fancier. So I made this little beauty. Really took no time at all, I had the waffles already in the freezer. So I just sauted the peppers and tomato’s, sprinkled with onion powder and chives then cracked an egg on top. VOILA.
No salt needed in my opinion as the sun dried tomatoes are salty enough. This breakfast is certainty filling with the addition of my oat waffles. If you haven’t checked these out then please do they are so quick, crispy and delicious. Not to mention way healthy than a lot of the waffle recipes out. *TIP* Try to always make extra portions of waffles or pancakes in future and just throw them in to a zip lock bag and store in freezer. Saves SO much time and dirty dishes.
So my boys had two very different verdicts on this breakfast, although it wasn’t for them I wanted to see what they’d say. Ismael (3 years old) and a VERY picky eater just gave it a dirty look and said YUCKY. Ibrahim (2 ) was tryna shove his hand down the plate while Ismael was saying YUCKY. Haha, these boys!!

Chive, Roasted Peppers and Sundried tomato Eggs Breakfast With Oat Waffles
Quick and tasty breakfast.
Ingredients
- 1 egg
- 1 slice roasted pepper
- 1 sun dried tomato
- 1/2 teaspoon onion powder
- 1/4 teaspoon pepper
- 1 tablespoon chives
Instructions

Chop up roasted peppers and sun dried tomato's.

Oil a pan on medium heat and saute the peppers and tomato's and cook for 3 mins.

Season with salt and pepper and crack the egg on top. Sprinkle onion powder and pepper on top. Lastly sprinkle some chives on the egg. Cook egg to your preference.
