Quinoa and lentil salad
This recipe is great as a side dish and can hold its own eaten alone. It’s hearty with the quinoa and lentils but also light and refreshing with the rocket, plum tomatoes and tangy coriander sauce.
This salad is bit of a superfood with all the goodies packed into it. Quinoa is a complete protein so this super grain mixed in with lentils that are high in protein and fibre own right means this dish can satiate you.
Refreshing ingredients

- Lentils
- Rocket
- Roasted red pepper
- Plum tomatoes
- Coriander dressing
As long as you have some cooked lentils and quinoa this recipe is extremely quick to whip up. If you are having a dinner party serving this on a large serving dish will impress your guests.
A perfect salad hot or cold
This salad can be eaten warmed up or cold. It’s a great dish to have for lunch, with your dinner, great to take to work and even as a nice bright salad for a picnic. Just add the dressing when you’re ready to eat!
The main hero here is the coriander sauce. If you have any sauce left over you can marinate this sauce into chicken or fish. I always have a jar in my fridge and I add it on everything. It’s absolutely divine on just about anything!

Quinoa and lentil salad with tangy coriander sauce (gluten free & vegan)
A not so boring lentil and quinoa salad with a deliciously addictive tangy herby sauce. A fun side dish served cold or warm.
Ingredients
Quinoa and lentil salad
- 2 cups cooked quinoa
- 1 cup cooked lentils
- Large handful rocket (2 cups)
- 1/2 cup chopped roasted red peppers
- 3/4 cup chopped plum or cherry tomatoes
- Juice of half lemon
- 1 cup tangy herb sauce
Herby sauce
- 1 cup coriander
- 1/2 cup parsley
- 2 garlic cloves (more or less depends on how garlicky you like your dishes)
- 1 whole lemon (juice)
- 1/3 cup avocado mayonnaise (more if you like very creamy) OR either: regular mayo, extra virgin olive oil* or greek yogurt
- 1/4 teaspoon sea salt or more depending on taste
- 1 tablespoon extra virgin olive oil
- 1 tablespoon honey optional - for sweetness.
Instructions
Coriander sauce

Add everything in a blender and blitz until very smooth. Store in fridge until ready to serve.
Quinoa and lentil salad

In a bowl add everything except the sauce and mix gently.

Once fully mixed add 3/4 of the sauce. Mix once again and taste, add lemon juice at this point if needed or extra salt and pepper.

Plate up on a nice serving dish and add the remaining 1/4 of the sauce as soon as serving.
Recipe Notes
*If you are using olive oil then ignore the extra 1 tablespoon in the recipe and just use 1/4 cup olive oil.
I made this recipe for a family gathering and it was such an easy dish to make. And more importantly, prepare in advance and just drizzle the sauce when you serve. I used Greek yoghurt and it worked really well!
