So I haven’t been able to edit posts for a while now. This is because my kids just won’t nap anymore. Have you ever tried to take pictures of treats and edit posts while you have kids hovering around you..all..day?

I had exactly 45 mins to make these and take pictures while the kids ate their lunch. I was so proud of myself, I mean this must be some kind of world record or something.
Nap times just don’t happen at our house anymore. I don’t think I can live without naps – seriously I can’t manage. I have not done anything for myself for a month. Hence the no posts for a while. Those 2 hour naps used to let me do a lot of stuff, like eat lunch and shower? You know the basics..
On a lighter note how cute are these cups? These bite sized yummy peanut butter chocolatey goodness are so indulgent. Trust me when I say you will be wondering why you have never made these before! They include wholesome ingredients and they taste so freaking good. Great snack to give you some energy in the middle of the day and prevent you from grabbing your typical shop bought chocolate bar.
You could just melt good quality dark chocolate as the chocolate base but to make it extra healthy I added together some cacao powder, coconut oil and honey, add a little vanilla if you wanna get fancy.
Simply freeze the chocolate mixture in cupcake cases for 10 mins, dollop some peanut butter mixture on top and then freeze again. How simple right? Sprinkle some flaky salt on top and your in heaven the salt really takes the cups to another level in taste.

Healthy Salted Chocolate Peanut Butter Cups
Ingredients
For the dark chocolate
- 1/3 cup cacao powder
- 1/4 cup coconut oil
- 2 tablespoons honey
- 1/2 teaspoon vanilla extract optional
For the peanut butter
- 1/3 cup pure peanut butter
- 1 tablespoon coconut oil
- 1 tablespoon honey
- 1/2 teaspoon vanilla extract optional
Flaky salt (a tiny pinch on each peanut butter cup)
Instructions

For the dark chocolate - Mix all the ingredients together and stir until super smooth. Pour a tablespoon of the chocolate sauce into each cupcake case. When this is done, freeze for 15 mins. *IF your using a dark chocolate bar, chop the bar up and melt in a bowl in the microwave for 30 secs.*

While chocolate layer freezing, prepare the peanut butter mixture by mixing all the ingredients together until smooth and drippy.

When the chocolate layer has hardened in the freezer take it out and spoon a tablespoon of peanut butter on top of the chocolate layer.

Finally sprinkle with flaky salt and return to freezer for another 15 mins. Ready to eat then and there, but you could store in the freezer until you wanna eat them. Take them out 5 mins before eating and they are AMAZING!
Recipe Notes
*You could also just melt a chocolate bar instead of making your own chocolate. Just try and make it a good quality dark chocolate with 70% higher cacao content, you know so you won't feel as bad when you eat these all by yourself*
