Coconut lovers come out come out! These amazing bounty bites are just up your street. So delicious and creamy, these bites are dairy free, gluten free and SO ADDICTIVE!
So I grew up on eating bounty bars. I know a few people can’t stand this particular chocolate but I LOVE IT. I was also one of my mothers favourite chocolates.
If you are following my instagram journey with my mum then you will have noticed she is going gluten free and refined sugar free. This meant I had to up my game and make sure she has snacks set up or else she may fall back into bad habits (crossaints and the like!).
Enter these delicious, creamy, morish delicate bites of chocolate and coconut.
Coconut and chocolate goes SO well with each other. There is nothing like making your childhood favourite chocolate in the comfort of your own home. After seeing the finished results you will 100% feel fancy! Chocolate making is an art and a beautiful one at that.
The best thing about making desserts your self is that, you know exactly what went into these bites and I’m more than happy for my whole family to stuff their faces with these beauties. This recipe has just 4 simple ingredients that are definitely on the healthier side.
- Coconut cream
- Desiccated coconut
- Honey
- Dark chocolate – (a good quality bar, 70% or above)
I have made bounty bars before with only desiccated coconut, honey and chocolate. But I just wanted to a creamier texture and thought..why not add coconut cream? There was block of coconut cream just looking at me so I cut up 50 grams of it and added a splash of hot water from the kettle to change the solid texture to a creamier one. Since using this heavenly smooth cream that day, I honestly cannot see my self making bounty without coconut cream again!
These bounty bites are not overly sugary and that is the beauty of making desserts at home your self, you can control what goes in.

Healthier bounty bars
Ingredients
- 2 cups dessicated coconut
- 1/2 cup coconut milk you can use the thick part of a chilled coconut milk can (not the water) the colder it is the creamier it is. OR if you have a block of coconut cream cut 50 grams and keep adding splashes of hot boiled water to make into a creamy texture.
- 2 tablespoons honey/maple syrup
- 100 grams good quality dark chocolate 70% or above
- 1 tablespoon coconut oil
Instructions

From a chilled coconut milk can, scoop out the creamy park and leave out the water.

Add the cream into a bowl, add the both the honey and dessicated coconut in a bowl.

Mix untill well combined. Fill the mixture in a sillicon ice cube mould and freeze for 10 mins. OR if you don't have a mould - just shape the mixture in your hands, place on partchment paper and freeze for 10 mins.

While the moulds are freezing melt dark chocolate and coconut oil togethe, ready to dip the bars into.

When the coconut filling is nice and set pop out of the mould and dip into the melted dark chocolate. Place the bars carefully on a partchment paper and put back in the fridge for another 10 mins.

Once the bars are set, enjoy and try not to eat all at once. Although I did this the first time I made them and I don't regret it one bit!
