Quick on the go breakfast for you and the family with these healthier banana walnut crumb muffins. Made and baked in less than 30 mins these muffins are wholesome, filling and YUM!
If you guys have been following my Instagram stories you will know I came back from Istanbul 2 weeks ago and I had the BEST time. Mini vacay for the hubby and we loved every minute of it. I really needed a break and was looking forward to this holiday for 7 months since we booked it sooo early on in the year.

But now we are back to reality with kids, housework, nursery runs and not to mention SNACKS. Loads of snacks. As soon as we came back I made these banana walnut crumb muffins. I make these a lot and more so now since I started putting a delectable walnut crumb on top. The kids love these and eat them in record timing.

Walnut = brain food!
Walnuts for a crumb topping you say? Trust me on this. As well as being delicious walnuts have so many benefits to them. I try to incorporate walnuts into the kids diet a couple of times a week. Walnuts are amazing for brain development. I didn’t even realise until doing some research that these little nuts even look like the human brain. *Mind blown* It surely can’t be a coincidence that these nuts do so much for brain development. Walnuts contain more essential fatty acids like Omega -6 and Omega – 3 than most other nuts. They also contain so many other benefits like vitamins varying from vitamin C, vitamin B6, thiamin, riboflavin, niacin, pantothenic acid, and folate, as well as minerals such as calcium, iron, magnesium, phosphorus, potassium, sodium, and zinc.
So you guys can see why I am such a big fan of walnuts! Sweetened with a little honey and adding a little coconut oil and oats you have your self a seriously yum crumb topping. You could even toast this crumb and voila you have a super fast walnut granola.
Walnuts are super easy to hide into kiddy snacks. Just blend them into crumbs using a food processor and you are good to go. Sprinkle on:
- Pancakes
- Yogurt
- Cereal
- Milkshakes
- Smoothies
The list is endless. Seriously get walnuting like now!

Healthy Banana Oat and Walnut Crumb Muffins
Ingredients
Wet ingredients
- 2 medium sized bananas
- 1/4 cup almond milk
- 1/4 cup olive oil/butter/coconut oil (melted) butter works perfectly too if you are not dairy free.
- 1/3 cup honey
- 1 teaspoon vanilla extract
Dry ingredients
- 1 and 1/4 cups spelt flour or whole wheat flour plain flour works well too.
- 1/4 cup regular rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Walnut and Oat Crumb
- 1/2 cup crushed walnuts
- 1/3 cup regular oats
- 1 large tablespoon honey
- 1 tablespoon melted butter or coconut oil
Instructions

Preheat oven to 180*C.

First make the walnut and oat crumble by mixing all the crumb ingredients together. Set aside.

In a bowl mash the bananas and then add the rest of the wet ingredients. Mix until fully incorporated.

In separate bowl mix together the dry ingredients. Once mixed add the dry ingredients into the wet bowl.
Fold gently and pour into muffin tins/mould.

Sprinkle the oat and walnut crumb on top of the muffins, and bake for 20/22 mins. I check on them at 18ish mins.

Let the muffins cool for 10 mins and then remove from the muffin tin/mould, Enjoy! Store at room temp for two days, refrigerate to keep for longer.
