Healthier pumpkin oat waffles. Filled with pumpkin spice and actual pumpkin! These waffles are warming, cosy AND super filling winter breakfast.
Waffles
We are waffle ADDICTS in our home. I started making them 3 years ago for my kids and we have not stopped ever since.
Hands down the best kitchen gadget I have ever brought.
You just close the lid and magic happens. No waiting over a hot fire or pan. You get to multi task while waffles are cooking up and us parents all know multi tasking is a must.
Waffles are SO EASY to make. The machine itself is so versatile. You can make practically anything into a waffle shape and the kids go crazy for it!!
I make various things like:
- Sweet waffles
- Veggie fritters
- Savoury waffles
- Hash browns
- Waffle sandwiches (Just pressing a regular sandwich into a waffle machine – SO GOOD!)
Pumpkin
This winter I have gone crazy with the particular vegetables, squash and pumpkin. The farmers markets are still filled to the brim with these veggies and I plan to make the most out of them during every meal time!
I include the pumpkins/squash into lunches, dinners and BREAKFAST.
By breakfast I mean pumpkin waffles, OMG so good. Spiced with those beautiful warming pumpkin pie spices like cinnamon, clove and allspice. These waffles are so perfect for winter and makes your breakfast that much more exciting.
To make these waffles you need cooked pumpkin. I cook it by roasting a whole pumpkin in the oven. Find out how I do that here.
When you roast it you can use the flesh for so many recipes, waffles, pancakes and BROWNIES!
Yesssss brownies make your favourite brownie batter and add in a half cup of squash or pumpkin flesh to make yourself some EXTRA fudgy brownies.
Check out these healthy date fudge squash brownies. They are sweetened with only dates, so these are extra healthy.

Healthier Pumpkin Oat Waffles
Ingredients
- 2 eggs
- 1/2 cup milk maybe abit more
- 1/2 cup pumpkin puree (cooked inside flesh of pumpkin)
- 1 cup oat flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/8 teaspoon cloves
- 1/2 teaspoon ginger
Instructions

In a bowl mix all the wet ingredients together until nice and smooth.

Add the dry ingredients, which is the oat flour and spices into the wet ingredients and mix untill all combined.

Pour into hot waffle machine and bake until cooked. (Every waffle machines have different ways to tell you the waffle is cooked. But it is usually cooked in 4 mins.)

When cooked quickly add your topping and enjoy!
