Lockdown blues won’t be getting you with this beauty of a summer treat. This cooling mango, mint and coconut ice cream is such a mood booster. Get the kids involved and enjoy a wonderful summer treat. It’s so creamy and delicious you won’t believe its only 5 ingredients!
The combination of the coconut mango and mint is so satisfying to your taste buds, the smell itself is beyond gorgeous. It’s like your eating a mocktail! Try not eating the entire batch by your self. But if mango and mint isn’t your thing (how could it not?) then you could totally change up the flavours of this easy mango, mint and coconut ice cream to your preference. Switching it up for another herb like basil or different fruits – pineapple works beautifully. I honestly can’t believe it takes under a minute in a blender to transform a few basic ingredients into this beautiful ice cream.
This ice cream has sorbet vibes with the large fruit content but I think the creaminess of the coconut milk gives it a pass as ice cream. Pop a scoop onto an ice cream comb and get the kids excited..maybe leave out the mint if it grosses them out!
Let’s get to the good stuff. Before serving – if frozen take it out and thaw for at least 15/20 mins. You want to make it a scoopable texture so serving it straight out if the freezer is impossible.

Easy Mango Mint Coconut Ice Cream
Ingredients
- 3 cups frozen mango
- 1 cup coconut milk
- Zest of 1/2 lemon
- 2 tablespoons honey/agave nectar/maple syrup
- 4 mint leaves
Instructions

Put everything in to a strong blender/food processor and blend until smooth. This may take a couple of minutes, depending of the strength of your food processor/blender.

Once everything is smooth, taste and add more mint or honey to your preference. If your ice cream is still cold and thick then you can serve immediately! If it is too soft then pour into a loaf tin and pop in the freezer for 2 hours or until solid.

Bring out and let sit for at least 15 minutes before serving so its scoopable!
