A creamy roasted red pepper and coconut sauce that is so rich and delicious It is so simple, it’s made in minutes! It is dairy free and so addictive. This sauce can be drowned in any dish you desire.

I have seen so many quick cheese and red pepper sauces around recently I felt like I was missing out on all the fun. My son is dairy free and if I am tired of making separate dinners. If I was going to make a red creamy sauce for the family, I would love him to eat it too.

Roasted red pepper coconut sauce.
Well now we have a family favourite that I have made around 3 times this week alone. It honestly does not taste heavily of coconut and regular cream is also DELICIOUS, I used that last week. We have had this sauce simply with pasta, cooked in fish (both salmon and cod) but my favourite has to be this chicken and mash dish.

Chicken and mash.
I simply cooked the chicken in some olive oil, garlic, salt and pepper and let it cook and brown nicely. After that i just pour the sauce in and let it bubble for a minutes. It is as simple as that. The sauce becomes, rich and creamy with a beautiful red hue.
Pasta sauce
You honestly have to try this sauce. To make it as pasta sauce, simple saute onions, add your seasoning herbs and pour in the red pepper sauce. Cook until it has bubble and thickened. Voila! A no tomato pasta sauce. Not that I have anything against the humble tomato but sometimes a red pepper sauce is just as delicious!
Perfect to bake in the oven too.

Creamy roasted red pepper coconut sauce - dairy free
Ingredients
Red pepper sauce
- 1/2 can coconut milk (chilled) scoop the thick part from cold can and some of the milk too to help blend.
- 1 whole red pepper roasted
- 1/2 the juice of a lemon (optional)
Chicken
- 1 whole chicken breast sliced into thinner pieces
- 2 cloves garlic
- 1/2 teaspoon salt
- 1/2 teaspoon pepper go crazy with the spices if you want!
Mash
- 3 large potatoes
- 3 tablespoons coconut milk
- 1/2 teaspoon salt
- 1/2 a squeeze of lemon
Instructions

Roast pepper in the oven until it gets black in certain places (not burnt though). You can also just use roasted peppers from a jar.

Add the roasted peppers into a blender with the coconut milk. Add more coconut milk if you want it very runny.

Pour on to a pan with chicken or if by it's self a lilttle olive oil for a couple mins until it bubbles and thickens. If it gets too thick, just add more coconut milk. Squeeze lemon juice on top and you are done.
Mash potatoes

Peal potatoes (I do not bother peeling!) and chop into small cubes, the smaller the cubes the quicker they cook.

Boil potatoes on high while the chicken is being made (around 10 mins).

Once cooked, drain and mash. Taste and add more salt and pepper if needed.

Add the coconut milk and mash again until super creamy. Add a huge squeeze of lemon to finish off.
Chicken

Fry up garlic in a pan with olive oil and add chicken

Slice up chicken in to thin strips and season with salt and pepper.

Add the chicken in the pan and fry until cooked and browned on both sides.

Add the red pepper sauce and pop a lid on it while it bubbles and thickens up. This takes a couple of minutes. Squeeze a nice amount of lemon on top, garnish with coriander and that it is.
