You have to keep a jar of this delicious creamy herby green dressing in the fridge at all times. It’s dairy free and packed with antioxidants, healthy fats and and then some! Perfect enough to drench on everything your heart desires!
I have been meaning to find a way to get loads of fresh herbs like coriander and parsley into my kids without them fussing. These herbs are power houses filled with antioxidants. I like to add as much antioxidants as I can in myself and my families diet.
The world is getting more toxic and antioxidants help our bodies fight and prevent diseases. The more of antioxidants we consume the more we are able to keep up our immunity naturally.
There are a range of fruits and vegetables that are abundant in antioxidants. This recipe is showcasing coriander and parsley.
This dressing goes on everything
The only way I could think of adding it to the kids diet was in a dressing. So we did it on salads at first. They were not too fussed, so then I added it on everything else we ate like:
- Grilled chicken
- Roasted veggies
- Mixed into cooked pasta
- On top of my eggs sunny side or omelette!
- More recently mash potatoes – A GAME CHANGER This dressing is so good on mash.
It is now a staple in my fridge.

Creamy herby green dressing - vegan
- 1 big handful coriander
- 1 small handful parsley
- 1 or 2 cloves garlic I like 1, ad more if you want it super garlicky
- Juice of 1 lemon
- 1/3 cup coconut yogurt OR regular yogurt OR mayo. It works really well with mayo, it gives an extra tang that I love.
- 2 tablespoons extra virgin olive
- 1 tablespoon Honey optional
- Pinch of salt
Super simple, just add everything to a blender and blend!
Add a touch of water if you need to help the blender out. Taste and add more lemon, salt or garlic to your taste.
