Does anybody els have a huge obsession with doughnuts? I just can’t walk past a doughnut shop and not stare at the window and thinking how those perfectly shaped circles are perfection on earth. (Then I barge past people and order as if
my life depends on it).
Every single time I take a bite I get an instant happiness high! Eating a doughnut is never a mistake in my book. Everything in moderation I always say. But with each bite I do feel a little naughty. Like a good naughty. Something shouldn’t be this tasty kind of naughty!
But let’s be honest we all know the downside to donuts, they are just overly oily and drenched in powdered sugar. And sometimes I just wanna have more than one donut with out all that guilt.
Come through baked donuts. Yes these are a thing.
I’ll be honest these are kind of like muffin in a doughnut shape but nonetheless the feeling of having a doughnut IS there. Also have I mentioned how much fun it is to pip doughnuts into doughnut trays? Very therapeutic and satisfying thing to do.
I tried to recreate one of my favourite doughnut flavours the classic maple glazed, but I added a little twist. These baked doughnuts have a silky cinnamon and ginger maple glaze. I also sprinkled some hazelnuts on top for extra crunch and texture. The flavours are so moreish I know you won’t be having just one of these. Be creative with the glazes to recreate your favourite donut. They honestly take minutes to make and minutes to bake.
Approximately 5 mins prep time and 8 mins to bake.

Cinnamon and Ginger Maple glazed baked donuts
Ingredients
Dry ingredients
- 1 cup whole wheat flour
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda or 1/2 teaspoon apple cider vinegar
Wet ingredients
- 1/4 cup light brown unrefined brown sugar
- 1/4 cup milk
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 teaspoon vanilla extract
- 1 egg
For the cinnamon and ginger cream cheese glaze
- 200 grams cream cheese
- 1/4 cup pure maple syrup
- 1 and 1/2 teaspoon ground cinnamon
- 1 and 1/2 teaspoon ground ginger
- 1/2 teaspoon maple extract
- 2 tablespoons double cream (whipping cream)
Instructions

In a bowl mix the dry ingredients together.

In another bowl mix the wet ingredients together.

Pour the wet ingredients into the dry and fold gently until fully mixed.

Oil a donut tray with a pastry brush or your fingers! Get a piping bag and pour the batter in to it. Pipe the donut mixture into the donut tray 3/4 of the way full. Bake the donuts for 8-9 mins at 180*C.
To make glaze

Mix together cream cheese, cream, maple syrup, ground cinnamon, ground ginger and vanilla. Mix vigorously with hand whisk (or a handheld whisker) until thickened and whipped up.

Once baked leave for 5 mins to cool and then take the donuts out and cool them down further on a rack. Once COMPLETELY cooled down, glaze the donuts dipping top half into the glaze. AND EATTTTTT!!
