Apple crumble with roasted coconut flakes in the crumb takes these crumble bars to the next level. Naturally gluten free, sweet, tart and bursting with cosy flavour!
Apple crumble
So apple crumble is in my ultimate top 3 favourite desserts. Cinnamon rolls and chocolate fudge cake are also on that list! I love eating apple crumble in the classic way with HOT custard and a spoon..it is such conforming dessert.
But sometimes I just want to grab and go dessert like snack. That’s where these apple crumble bars come in. I just pressed a coconut and oat crumb, poured apple filling and topped with more crumb.
These are naturally gluten free as I used oat flour as the flour base and roasted coconut. These two were a match made in heaven for this crumble.
Roasted coconut
I added roasted coconut flakes into the crumb because I have bags and bags of this stuff. Roasted coconut flakes/chips are way more flavourful than regular non roasted. You gotta roast your coconut guys!
That deep roasted flavour gave these apple crumble bars a delicious fragrance and a coconut chew. Absolutely delicious.
Dessert
Even though these are bars and not classic apple crumble you could TOTALLY still drench these babies in hot custard. A delicious dollop of vanilla ice cream goes beautifully with these bars too.
After a long day of fasting this Ramadan a hot custard and crumble is all I would love to eat!
Dairy or dairy free!
So these crumb bars can be easily made with or without dairy/vegan.
You can use either :
- 1/4 cup coconut oil
- 1/4 cup melted cacao butter
- 1/4 cup grass fed organic butter.
All 3 are delicious so it is entirely up to you. Although I would like to mention cacao butter really intensified the coconut flakes flavour so if too much coconut is not for you then maybe try the other 2 options.

Apple crumble coconut bars
Ingredients
Apple filling
- 1 large bramely apple or any tart apple or 2 medium apples
- 2 tablespoons coconut sugar or honey
For the crumb
- 1 and 1/2 cups oat flour
- 2 cups roasted coconut flakes
- 1/4 cup butter or melted coconut oil or even melted cacao butter
- 1/4 cup coconut sugar
- 2 tablespoons honey
- 1/4 teaspoon sea salt
- 1/2 teaspoon cinnamon
Instructions
For the crumb

Preheat an oven to 170*C.
Blend oats into oat flour and roughly ground the coconut flakes too. Crush only roughly as we want the coconu flake texture in the bars.

Add everything in a bowl and mix until it becomes crumbly but also slightly sticky.

In a tray press some of the crumb to make a bottom layer. Not too thick and not too thin.
For the filling

Peel and cut the apples. On a medium heat. Cook the apples and add a splash of water to help start the cooking process. After a couple of minutes mix in the coconut sugar and lemon juice.

Simmer on low until softened. This shouldn't take longer then 10 mins. Once cooked set a side ready to add into the crumb layer.
Assemble

Add the apple filling on to the bottom layer generously.

Get the rest of the crumble mixture and sprinkle on top until fully filled.

Bake for 20 mins or until beautifully golden on top .

Once completely cool, slice into squares and enjoy hot or cold. I love having these bars with piping hot custard! But these are also SO good the next day after being in the fridge.
