Extremely easy and a delicious 3 ingredient healthy coconut macaroons with natural and wholesome ingredients that will keep you coming back for more!
So you have a bag of desiccated coconuts that you bought that one time for a random recipe? You never used it again? No idea what to do with them? Look no further, I bring you..MACAROONS!
3 ingredient macaroons actually.
Healthier coconut macaroons
I love coconut macaroons and never realised how easy they were to recreate at home and take around 10/13 mins to bake.
All you need is:
- Desiccated coconut
- Egg whites
- Liquid sweetener (I used honey)
For the mixing you will also need a mixer too, unless you’re stronger than me and are happy to whip up egg whites until nice and fluffy. Patience is a weak point for me.
You can also add chocolate to decorate which is totally optional – or not.
Honestly, these very similar to shop bought coconut macaroons. The only difference with this recipe is just the amount of sugar.
In my opinion, sometimes coconut macaroons can be overly sugary and filled with glucose and all types of other sugary syrups. These sugars are totally not needed and hide the true flavour of the coconut. Not to mention desiccated coconut is naturally sweet so it already lends a sweetness to anything when baking.
The best thing about these 3 ingredient macaroons is the texture – chewy and crispy at the same time. Absolutely delicious.
You can adjust the sugar levels to your liking. I make these for the kiddos so a heaped tablespoon of honey is perfectly sweet for them. Make these even more sweet by added more, or even drizzling some chocolate on top.
This really makes the macaroons look so impressive and like you have put a lot more effort into them than you actually did!

3 ingredient coconut macaroons
Ingredients
- 2 cup dessicated coconut I used unsweetened, sweetened is also fine.
- 3 egg whites (No yolks, just the egg whites).
- 2 tablespoon honey you could use more or less to your liking.
Instructions

Pre heat an oven to 170*c.

In a bowl crack 3 eggs and seperate the yolks from the whites. (Set a side the yolks and use for something else.)

With an electric whisk (or your hand if you have the strength!). Beat the egg whites until fluffy.

Add the desiccated coconut and honey. Mix everything together untill fully combined.

Use a tablespoon scoop to shape the macaroons and arrange on a baking tray. Bake for 10-15 mins untill golden. Once baked let the macaroons cool and enjoy as they are or drizzle/dip with dark chocolate and enjoy!
