Easy Mango Mint Coconut Ice Cream

  • 3 cups frozen mango
  • 1 cup coconut milk
  • Zest of 1/2 lemon
  • 2 tablespoons honey/agave nectar/maple syrup
  • 4 mint leaves


  1. Put everything in to a strong blender/food processor and blend until smooth. This may take a couple of minutes, depending of the strength of your food processor/blender.

  2. Once everything is smooth, taste and add more mint or honey to your preference. If your ice cream is still cold and thick then you can serve immediately! If it is too soft then pour into a loaf tin and pop in the freezer for 2 hours or until solid. 

  3. Bring out and let sit for at least 15 minutes before serving so its scoopable!
