Super Easy Oat Pancakes

Ingredients

  • 2 cups regular oats steel cuts or rolled
  • 2 medium eggs
  • 1 and 1/2 cups milk any type of milk will do. (you may need to add more milk if the batter it too thick)
  • 1 tablespoon coconut oil or olive oil
  • 2 tablespoon honey

(If you want here you could also add *a teaspoon baking powder and a teaspoon vanilla extract*)

Instructions

  1. In a blender combine all of these ingredients. Blend until smooth.

  2. Set pan to medium heat and add in a drizzle of olive oil. Dollop a scoop of batter into pan and when bubbles appear on top flip. Continue this until till the batter is finished and voila pancakes are done!

Recipe Notes

I usually use half this recipe for my kids. But make double for the next day. 

If you already have oat flour at hand. You could just use a whisk and bowl. Mixing the dry ingredients first and then adding into the wet. This would give you a smooth batter ready to go.
