So I have a confession to make, I use to have
still have a major obsession with donuts. I just can’t walk past a donut shop and not stare at the window and just smile thinking you are perfection on this earth. (Then barge past people and order as if my life depends on it)
Seriously the texture and the sweetness is unreal. Lets not forget the instant happiness you feel when you take a bite. Don’t you just feel naughty? Like a good nuaghty. Like you know something shouldn’t be this tasty!
But gurl we all know the downside to donuts, they are just overly oily and drenched in powdered sugar. And sometimes I just wanna have more than one donut..
So baked donuts?
Yassssss these are a thing.
And I’m happy they are a thing, I do not have the time to be making a dough from scratch for hours. Not to mention what the heck do I do with the oil left over? I get nervous thinking about how I would keep the oil in my kitchen for days thinking ‘I will come up with something to do with all the oil..’
The answer is no I won’t, it’s just gonna hang out nervously in my kitchen.
It’s just too much. So baked donuts are now MY JAM!
Be creative with the glazes to recreate your favourite donut. They honestly take minutes to make and minutes to bake.
5 mins prep time and 8 mins to bake. (Say what now?)
So by the time you make a decision of what your gonna eat for lunch you could have made these as a cheeky snack/dessert too!
Cinnamon and Ginger Maple glazed baked donuts
- 1 cup whole wheat flour
- 2 teaspoons ground ginger
- 2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda or 1/2 teaspoon apple cider vinegar
- 1/4 cup light brown unrefined brown sugar
- 1/4 cup milk
- 1/4 cup Greek yogurt
- 2 tablespoons olive oil
- 1 teaspoon vanilla extract
- 1 egg
For the cinnamon and ginger cream cheese glaze
- 200 grams cream cheese
- 1/4 cup pure maple syrup
- 1 and 1/2 teaspoon ground cinnamon
- 1 and 1/2 teaspoon ground ginger
- 1/2 teaspoon maple extract
- 2 tablespoons double cream (whipping cream)
In a bowl mix the dry ingredients together.
In another bowl mix the wet ingredients together.
Pour the wet ingredients into the dry and fold gently until fully mixed.
Oil a donut tray with a pastry brush or your fingers! Get a piping bag and pour the batter in to it. Pipe the donut mixture into the donut tray 3/4 of the way full. Bake the donuts for 8-9 mins at 180*C.
To make glaze
Mix together cream cheese, cream, maple syrup, ground cinnamon, ground ginger and vanilla. Mix vigorously with hand whisk (or a handheld whisker) until thickened and whipped up.
Once baked leave for 5 mins to cool and then take the donuts out and cool them down further on a rack. Once COMPLETELY cooled down, glaze the donuts dipping top half into the glaze. AND EATTTTTT!!
