Something I love even more then cookies are QUICK cookies. I mean I really hate faffing about in the kitchen. Quick and easy is my thing. Besides making the almond butter as I ran out of some, these cookies seriously took 5 mins to make and 8 mins baking time. 13 mins in total? YES PLEASE!!!
I was fasting while making these, not a good idea. Especially when you give your kids a few and they gobble them up and try and feed you some too. The temptation. Get away from me!
Below is the simple steps of how I made the almond butter: *Roast for 10 mins in oven on 180*C, blend, scrap sides, blend again, turns into dough (last picture) then finally turns into smooth butter*
These cookies are perfect for when you have run out of snacks and are about to run to the shops. Just STOP and make these beauties. Almonds are amazing nuts not only are they delicious, almonds are also healthy fats and healthy fats help fight heart diseases and also lowers your cholesterol. No to mention almonds are also packed with calcium, magnesium, vitamin e AND copper. Tasty and good for you? Stopppp!

I was planning on adding an egg into these cookies but realised I didn’t have any. Hey I’m not complaining because these came out pretty damn good without the egg. *Note to self* Easy on the eggs. I swear I use waaay to many eggs. Meh.

Almond Butter Chocolate Chip Cookies
Simple almond butter and chocolate chip cookies. A scrumptious mix of chewy and crunchy enough to make you fall in love!!
- 1/2 cup oat flour (blended regular oats)
- 1/2 cup almond butter
- 3 or 4 tablespoons light brown unrefined muscovado sugar
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 or 3 teaspoons milk (any type)
- 1 teaspoon vanilla extract
- 60 grams dark chocolate chunks or chips
Preheat your oven to 18O*C.
If your almond butter is solid, heat up to make runny. Mix all your ingredients together, except chocolate and form in to a dough.
Add in the chocolate chips/chunks.
Roll and shape into cookie shapes.
Place a chocolate chunk on top each cookie and bake for 7/8 mins for 180*C. ENJOY!
Cool down for 10 mins before eating.
